Place mold in the refrigerator and chill for at least an hour, or until candy is hard. Gently knock candy out of molds. Using decorative icing, gel or sprinkles, decorate candy to your preference.
Rubber molds work best for maple syrup candy, but lightly greased metal and wood molds also work well. Even small disposable aluminum foil pans, lightly greased, can be used.
